Raki

Raki, the clear local brewed single distilled liquor popular in Crete.

This clear liquor is called Raki in eastern Crete and is a single distillation process, with the ingredient Pomace (fermented pressed grapes, leftover from the winemaking process).
The other parts of Crete it is named Tsikoudia.
In the rest of Greece the liquor is called Tsipouro and is typically double-distilled and frequently includes spices.
Adding anis herbs and redistilling makes Ouzo in Greece and Arak in Turkey.

Other distilled liquor from pomace:
On the Balkan they distill Rakia (or Palenka) from fermented fruit like plums (Slivovitz), apples, pears.
Sudan uses dates for their Araki.
Italy is famous for its Grappa.
But ny most favourite is the Metaxa 3- or 5-star (years), from Greece., an amber colored blend of spirits and Muscat wine, aged in oak barrels.
